Cupcakes



It is the Diamond Jubilee this weekend ... a time for celebration of the Queen and all things British. So apologies for the American origins of this perfect bake! This is the first of two jubilee bakes, tomorrow I will post the perfect jubilee celebration show stopper cake to take to your friends on the bank holiday weekend.

The Jubilee is a great opportunity to bake, there are two extra days holiday which to most people means a well deserved break from work or for others an excuse to get together. Bake these and you'll be the most popular person at the party! 

Makes 14-16 Cupcakes
(depending on how full you fill your cupcake cases)
Pre-heat oven to 180°C
Bake to perfection for 18 minutes

You will need the following:
Cake
Cupcake cases 
(Jubilee themed if you fancy being keen)
225g Butter
225g Caster Sugar
225g Self Raising Flour
4 eggs
1 Drop of Vanilla Essence
1Tbsp Baking Powder

Icing
75g Butter
2tbsp Double Cream
175g Icing Sugar
Method
Line a muffin tray with cupcake cases

Cream together the butter and sugar
 

Add in the eggs one at a time
 

Next stir in the flour
 

Until it forms a smooth texture


Add a drop of vanilla essence

Add the baking powder

Fill the cupcake cases 2/3 full with mixture
& bake to perfection for 18 minutes

For the Icing Sugar
Mix together the butter and icing sugar

Add in the cream

Add a drop of vanilla essence

18 minutes later ... ta daa

Spoon a desert spoon sized blob of icing onto the cake & smooth over the top of the cake
Add a couple of blueberries and chopped up strawberries to the top for a patriotic effect...
