The Flapjack



Quite simply the best hangover helper out there in my opinion.

They are fabulous and so incredibly easy to make. Whenever my friends and I are struggling the day after a night out, flapjacks are our saving grace. When they come out of the oven they receive an extremely warm welcome! So here is my offering to you - the perfect flapjack recipe. 

Makes 12 large squares 
(if you want more, simply double or treble the mixture, bake for 5 minutes longer)
Pre-heat oven to 190°C 
Bake to perfection for 20 minutes

You will need the following:

180g Butter or Margarine
180g Granulated Sugar
240g Rolled Porridge Oats
50g Sultanas
2tbsp Golden Syrup


Method:

Measure into a bowl the butter, sugar and golden syrup. 



My good old-fashioned advice: lightly oil your spoon before you dip it into the golden syrup, this will avoid that sticky mess and the syrup will fall off the spoon with ease



Place these ingredients in a microwave for 1minute 30seconds or until the butter is melted.

Add in the sultanas and oats to the melted mixture & stir well.



Pour the mixture into a greased dish about 20cm x 30cm in size. If you want thicker flapjacks, use a smaller tin of 20cm x 20cm.



Press the mixture down and place in the oven at 190°C for 20 minutes

 


10 minutes into baking, remove the flapjacks from the oven and stir the mixture thoroughly. Press down the flapjack and place back into the oven for a further 10-15minutes.


When the flapjacks are golden, remove from the oven & leave to cool on a wire rack. Once cool cut up the flapjack & devour!
